This exceptional microlot comes to us through Chalo’s coffee, a dedicated coffee grower with whom we engage in direct trade, ensuring traceability, consistency, and fair compensation for his hard work. Grown by Chalos and his family in the mountainous region of Huila, specifically in the Caloto village, this coffee reflects the care and dedication behind every step.
The washed-process coffee is meticulously hand-picked, selecting only the ripest cherries. After harvesting, the cherries undergo a 12-hour fermentation in their cherry, are then depulped, and placed in airtight tanks for an additional 30-hour fermentation. The beans are finally dried in solar “marquesina,” where they dry slowly and evenly over approximately 10 days.
