Deep within the Ilamatepeque mountain range of western El Salvador, amongst natural springs and carefully pruned Ingas trees, Mauricio Escalon is hard at work on his farm “Finca Helvetia”. Here, at over 1400 MASL, Mauricio works with his team to grow Bourbon variety coffee trees, before picking, processing, and drying takes place on the estate. This lot was processed in the “honey” method, by drying the seeds without the skin, but with the pulp still intact, which results in a more crisp acidity and juicy sweetness.
