35 years ago, a young Colombian man from the Colombian village of La Paz, Cauca, began planting Caturra variety coffee trees in his mother’s backyard. That man was Guido Hernan Montenegro Lopez, and today he manages a farm with over 4000 trees of many varieties, including Castillo, Caturra, and Colombia. His farm “El Topacio” sits at 1940 MASL, and it is here that Guido picks his ripest cherries every 21 days, before laying them out to dry ferment for 15 hours, and multiple washes.
