This coffee is one of two lots we have bought from the Aguilera Brothers in Costa Rica. The Aguilera family’s farm Finca Toño sits at 1450 MASL, where the brothers grow Villa Sarchi variety coffees trees. The cherries are handpicked selectively, before being sent to the brothers’ own mill for processing. This lot was processed in the “honey” method, by drying the seeds without the skin, but with the pulp still intact, which results in a more crisp acidity and juicy sweetness.
